Key Lime Cheescake

This was my most epic fail, but I was able to actually save this one.

The beginning
My grandmother got me into baking. It started with a pound cake. Then I started to bake on my own, just for the love of the process. She’s shown me how to make pound cake, but also sweet potato pie. My wife and I make as good a sweet potato pie as you can imagine, just top it with whip cream, the first time I did it, I ate only sweet potato pie for thanksgiving day.

Baking on My Own
I started to diversify my baking abilities. I began with small things, like biscuits, then moved on to cookies, but eventually bake to pies. I had made a no bake cheesecake before, and also a baked cheesecake, something about the baked ones that you just can’t take away.

Ultimately, I decided to switch it up for a party. This time, I wanted to make a key lime cheesecake, I would do the entire process, no premade crust either. Everything went as planned, and I tossed the cheesecake into the oven, and then I noticed the missing sugar…

Missed ingredient
I feel like most of everyones post will likely be the same, but I missed the sugar. I knew I had to start over again. So we rushed grabbed new ingredients and made another one. I kept the previous cheesecake, what I learned in this process was that a homemade crust, was extremely tasty.

The fact that you add butter and sugar to the crust as well, the crust maintained a very good taste. The cheesecake itself was, as you can guess it, sour, but it still tasted decent enough to eat, which I did to ensure I didn’t waste it.

My wife also ate the cheesecake as well.

Play The Cards You’re Dealt
As a now self help guru, but also someone who has had to learn how to grow without light, and develop without direction, but also become a positive influence to a daughter and family without a lot of great role models, you aren’t always given the best hand.

Don’t fold though. Make due with what you have, and often things work out. You only limit you.
